Herbed Irish Soda Bread

Equipment

  • 1 Large Bowl
  • 1 Bowl
  • 1 Large Spoon
  • 1 Baking Sheet
  • 1 parchment paper
  • 1 Serrated knife
  • Cutting board or clean surface

Ingredients

  • 3 1/2 cups flour plus more for dusting
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 6 tablespoons powdered milk ***
  • 1 2/3 cup water***
  • 1 tablespoon vinegar
  • 1/4 cup chopped green onions
  • 3 tablespoons fresh herbs

Instructions

  • Preheat the oven to 450 degrees F.
  • Combine water, powdered milk and vinegar in a bowl and mix well.
  • Combine all dried ingredients in a large bowl. Add wet ingredients and stir until forms a dough ball. Dough will be mildly sticky.
  • Turn dough ball onto a lightly floured clean surface. Turn and shape into a round ball.
  • Place onto a parchment paper lined baking sheet and use a knife to cut a deep X in the dough.
  • Bake 35 to 40 minutes until brown. Let cool before slicing.

Notes

*** Optional: replace with 1 cup milk
  • If dough is too sticky to shape into a ball, try dusting with flour or wetting your hands. Be careful not to add too much flour - its ok if the dough is a little sticky!
  • This recipe is easy to experiment with! Replace the onion & herbs with additions of your choice. We like combinations like: cranberries & almonds, parmesan & bacon, chocolate chips & cinnamon. What combination would you like to try?
  • The combination of vinegar and milk creates buttermilk. Already have buttermilk on hand? It is ok to substitute 1 cup + 1 tablespoon buttermilk for the water, milk and vinegar ingredients.
