Grate carrots and set aside.
Chop golden raisins and set aside.
Use hands to smash and crumble oats, coconut, and pecans into bowl.
Add the carrots, raisins, maple syrup, vanilla extract, cinnamon and salt to bowl with oats, coconut and pecans.
Mix everything well. If mixture is too dry, add a little extra maple syrup or a tiny bit of water. If mixture is too wet, roll in coconut.
Roll into balls and store in fridge for a week or freeze and store 6 months to 1 year.
