Cherry Tomato Basil Bruschetta

Ingredients

  • 1 pint Cherry Tomatoes
  • 1 bunch Fresh Basil approximately a handful, chopped or torn
  • 1/4 cup Olive Oil 1/8 cup for tomato mixture and the rest for brushing bread
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 3 tbsp Balsamic Vinegar
  • 1 clove Garlic peeled and left whole
  • 1 Baguette

Instructions

  • Preheat the oven to 425°F.
  • Slice baguette into 1/2-inch slices and place on a large baking tray. Brush the top of each slice with olive oil.
  • Bake the baguette slices until golden brown and crisp, approximately 5 minutes. Once crispy and out of the oven, carefully rub the top of each slice with a whole garlic clove. This will leave a delicious garlic flavor without being too overpowering.
  • Slice cherry tomatoes into quarters and add to a medium-sized bowl. 
  • Drizzle a 1/8 of a cup of olive oil over top of the cherry tomatoes. Add salt, pepper, and balsamic vinegar.
  • Stack basil leaves together, thinly slice all together, and stir into tomato mixture.
  • Serve the warm toasted bread slices alongside the tomato basil mixture and when ready to eat, spoon tomato mixture on top of the toasted baguette.
