- Measure cups and spoons
- Mixing bowl
- Whisk or fork
Ingredients
- 1 cup greens mix
- 1/2 garlic clove thinly sliced
- 1.5 tablespoons olive oil
- 1/8 teaspoon red pepper flakes
- 4 eggs
- 1/8 teaspoon salt
- 1 pinch ground black pepper
- 1/4 teaspoon dried thyme
- 1/8 cup chevre cheese crumbled
Instructions
- Preheat oven to 350F
- Wash and dry greens mix; chop
- In a 10 in. skillet, cook the garlic in ½ tablespoon of olive oil over medium-high heat for 30 seconds
- Add the greens mix and red pepper flakes; cook until wilted (approximately 1-2 minutes)
- In a mixing bowl, use a whisk or fork to beat the eggs with the salt and pepper. Stir in the thyme and cooked greens mix.
- In a muffin tin, grease 4 of the muffin cups with the remaining olive oil
- Equally divide your egg mixture between the cups. Sprinkle the tops of each with crumbled chevre cheese.
