Colorful Ranch Vegetable Wraps

- Microwave-safe bowl

- Plastic wrap
Ingredients
Farmers Market Ingredients
- ¼ cup broccoli, diced
- ¼ cup carrot, peeled and grated
- ¼ cup zucchini, cut into small strips
- ¼ cup yellow summer squash, cut into small strips
- ½ tomato, diced
- ⅛ cup bell pepper, diced
- 2 Tbsp chives or green onion, finely chopped
Grocery Store Ingredients
- ½ Tbsp ranch seasoning mix
- 4 Tbsp cream cheese
- 2 8-inch flour tortillas
Instructions
- Gently wash produce under cool running water, pat dry, and prepare as directed.
- Stir the ranch seasoning into the cream cheese in a small bowl. Set aside.
- Place the broccoli in a small microwave-safe bowl with 1 Tbsp water. Microwave for 1 minute, then drain.
- Spread the cream cheese mixture onto the tortillas, leaving about one inch bare around the edge.
- Sprinkle the vegetables over the cream cheese. Roll the tortillas tightly, wrap in plastic wrap, and chill for 1–2 hours.
- Slice each wrap in half and serve.
Notes
Substitutions
- Cream Cheese and Ranch Seasoning Mix: Bottled ranch dressing.
- Vegetables: Any fresh vegetables on hand.
- 8-inch Flour Tortillas: Any size flour or corn tortilla.
