Elote en Vaso – Mexican Street Corn (in a cup!)
Elote en Vaso (Mexican Street Corn in a Cup) is a creamy, tangy, and mildly spicy treat that captures all the flavors of classic street corn with no grill required. Simply boil fresh corn, mix in butter, lime, crema, cheese, and seasonings, and enjoy this irresistible snack right in a cup.
1 Cutting Board
1 Sharp knife
1 saucepan
1 colander
1 glass or jar
- 2-3 ears of corn
- 3/4 tbsp unsalted butter
- 1 lime juiced
- 1 1/2 tbsp cotija cheese
- 1 tsp chili powder (to taste)
- 1 tsp salt (to taste)
Husk the corn – remove the silks and slice the kernels from the cob with a sharp knife.
To a saucepan, add your corn kernels and enough salted water to cover. Bring to a boil; let boil for 2-3 minutes.
Pour your corn into a colander to strain the water, then pour your corn into a glass or jar.
To your glass or jar, add butter and gently stir until melted.
Mix in lime juice and crema.
Sprinkle with chili powder and salt to taste. Mix well.
Top with crumbled cheese.
(Optional) Add a few drops of hot sauce for an extra kick!
