Summer Broccoli with Garlic Stir-Fry

Ingredients

  • 3 cups broccoli
  • 3 cloves garlic, minced

Pantry Staples

  • 1 Tbsp vegetable oil
  • ¼ cup water
  • Salt to taste
  • Black pepper to taste

Instructions

  • Gently wash produce under cool running water, pat dry, and prepare as directed.
  • Cut the broccoli into bite-size pieces, including the tender parts of the stem.
  • Heat the oil in a fry pan over medium heat.
  • Add the broccoli and garlic. Sauté until the broccoli begins to brown.
  • Add ¼ cup water, cover the pan, and cook for 2 minutes.
  • Remove the lid, stir, and cook for 3–4 minutes longer.
  • Stir often until the broccoli is soft and the water has cooked away. Season to taste.

Notes

Shredded carrots, or any other favorite vegetable, make a great addition to this recipe.
The key to a good stir-fry is cutting the vegetables into similar-size pieces and adding them to the pan in order of how long they take to cook. Add hard vegetables like broccoli, cauliflower, and carrots first. Add softer vegetables like zucchini, green beans, and mushrooms next. Finish with leafy greens like spinach or bok choy.
