Peach Galette (No-Fuss Peach Pie)

Ingredients
Farmers Market Ingredients
- 3 cups peaches, sliced into wedges, skin on
Grocery Store Ingredients
- 1 homemade or store-bought pie crust, rolled out into an 8–9 inch circle
- 2 Tbsp flour
- ¼ cup brown sugar
- 1 Tbsp lemon juice
- ½ tsp cinnamon
- ¼ cup peach preserves
Instructions
- Preheat the oven to 375°F.
- Prepare the pie crust and roll it into an 8–9 inch circle.
- Place the crust on a piece of parchment paper on a rimmed baking sheet. Return it to the refrigerator while you make the filling.
- Gently wash produce under cool running water, pat dry, and prepare as directed.
- Place the peaches in a bowl and add the flour, brown sugar, lemon juice, and cinnamon. Mix gently and set aside for 5 minutes.
- Leaving a 2-inch rim around the edge, spread the preserves in the middle of the unbaked crust.
- Drain any excess juice from the peaches and pile them in the middle of the crust, over the preserves.
- Gently fold the 2-inch rim of crust in toward the center. It will overlap slightly.
- Bake for 40–50 minutes.
Notes
Substitutions
- Peaches: Other seasonal fruit such as berries, apples, plums, or apricots, or a combination of fruit.
- Peach Preserves: Vary the preserves to match the fruit you use.
