Lettuce-Wrapped Chicken Tacos

Ingredients
Farmers Market Ingredients
- 2 lbs chicken
- 1 head butter or romaine lettuce
Grocery Store Ingredients
- 1 cup tomatoes (diced)
- 1 cup cheddar cheese (shredded)
- 1 cup sour cream (optional)
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 lime, juiced (optional)
Instructions
- Heat the olive oil in a skillet on medium heat. Dice the chicken and add to the pan, cooking for 5-7 minutes or until it’s fully cooked. Add chili powder, garlic powder, paprika, salt, and black pepper to the chicken. Mix and cook for another 2-3 minutes.
- While the chicken cooks, dice the tomatoes and portion out sour cream.
- Separate lettuce leaves and spoon the chicken into each leaf. Top with diced tomatoes, cheddar cheese, sour cream, and fresh lime juice if desired. Serve immediately and enjoy!

Substitutions
- Chicken: turkey, tofu, black beans mixed with roasted sweet potatoes, mushrooms, ground pork, white fish such as cod or tilapia
- Butter or romaine lettuce: iceberg lettuce, cabbage leaves, collard greens
