Heat the olive oil in a skillet on medium heat. Dice the chicken and add to the pan, cooking for 5-7 minutes or until it’s fully cooked. Add chili powder, garlic powder, paprika, salt, and black pepper to the chicken. Mix and cook for another 2-3 minutes.
While the chicken cooks, dice the tomatoes and portion out sour cream.
Separate lettuce leaves and spoon the chicken into each leaf. Top with diced tomatoes, cheddar cheese, sour cream, and fresh lime juice if desired. Serve immediately and enjoy!
